Air Fryer Garlic Parmesan Chicken Skewers

This Air Fryer Garlic Parmesan Chicken Skewers recipe is quick, easy and jam-packed with the rich savory flavors of garlic and parmesan!

Ingredients

Chicken Marinade and Skewers 

  • 2 pounds chicken breast, cut into 1/2 inch chunks
  • 1/4 cup mayonnaise or full fat yogurt
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt, adjust to taste
  • 1/2 teaspoon black pepper
  • wood skewers, pre-soaked for at least 30 minutes
  • cooking spray oil

Garlic Parmesan Sauce

  • 1/2 cup unsalted butter
  • 3 tablespoons parmesan cheese, freshly grated
  • 6 to 8 garlic cloves, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1/4 to 1/2 teaspoon kosher salt, adjust to taste
  • 1/4 teaspoon black pepper

Instructions

  • Into a large mixing bowl, add the chicken, mayonnaise, olive oil, and seasonings (paprika, garlic powder, onion powder, salt and black pepper). Thoroughly, mix ingredients together to combine. Cover bowl and refrigerate for 1 to 2 hours or overnight. Prior to cooking the chicken, remove from the fridge and bring to room temperature for at least 15 to 20 minutes.
  • Individually, thread the marinaded chicken pieces onto the pre-soaked skewers, about 6 to 7 pieces per skewer. Make sure the pieces are nice and compact. Preheat air fryer to 400F and spray some cooking oil into the air fryer basket. In batches, air fry the chicken skewers for 6 to 7 minutes, carefully turn the skewers and air fry for an additional 6 to 7 minutes or until golden brown and fully cooked through. If you have a kitchen thermometer, the internal temperature of the chicken should register 165F. Transfer cooked chicken skewers to a large plate.
  • In a small saucepan under medium heat, melt the butter and add in the minced garlic. Cook the garlic just until it starts to soften and become aromatic, about 1 to 2 minutes. Remove the pan from the heat. Let the garlic butter cool slightly about 2 to 3 minutes and mix in the parmesan cheese, fresh parsley and salt and black pepper.
  • Generously coat the skewers in the garlic parmesan sauce and serve as is or with your favorite side dish or dipping sauce. Enjoy!
