How to Make Air Fryer Lemon Pepper Chicken Skewers

This Air Fryer Lemon Pepper Chicken Skewers recipe is seriously delicious and so easy to make! Each bite of these skewers is packed with the savory, peppery goodness of the lemon pepper infused butter that coats the perfectly cooked chicken. The lemon flavor in this recipe adds a burst of freshness and nice tang to this recipe. To make these skewers, you will need the key ingredients shared below. 

Key Ingredients 

  • Chicken Breasts 
  • Lemons 
  • Unsalted Butter 
  • Olive Oil
  • Seasonings (Salt, Black Pepper, Paprika, Garlic Powder and Onion Powder)

Preparation 

  • Make Chicken Marinade – in a large mixing bowl, add the chicken, olive oil, lemon zest, lemon juice and seasonings. Mix ingredients together to thoroughly combine. Cover bowl and refrigerate the marinade for 1 to 2 hours or overnight. Remove marinaded chicken from the fridge 15 to 20 minutes before making skewers to bring to room temperature. 
  • Prep Skewers – thread 5 to 6 pieces of the marinaded chicken onto the pre-soaked skewers for a total of (8) chicken skewers. 
  • Air fry Skewers – preheat air fryer to 400F. Lightly mist the tray in the air fryer basket with some cooking spray. In (2) batches (4 skewers in each batch), air fry the chicken skewers for 6 to 7 minutes, carefully flip the skewers to the other side and air fry for an additional 6 to 7 minutes or until the chicken is fully cooked. If you have a kitchen thermometer, the internal temperature of the chicken should register at least 165F. Transfer first batch of the cooked chicken skewers to a large plate and air fry the second batch. 
  • Make Lemon Pepper Butter Sauce – as the last batch of skewer cooks, make the lemon pepper sauce. In a small mixing bowl, add the partially melted butter, lemon juice, lemon zest and seasonings. Whisk ingredients together to combine. 
  • Butter Up Skewers – using a pastry brush, thoroughly coat all sides of the cooked chicken skewers in the lemon pepper sauce. 
  • Serve – lemon pepper chicken skewers as is or with your preferred side and sauce.

Ingredients

Chicken Skewers 

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • zest 2 lemons
  • juice 1/2 large lemon about 2 tablespoons
  • wood skewers soaked for 30 minutes before using
  • cooking spray

Lemon Pepper Butter

  • 1/2 cup unsalted butter partially melted
  • 1/4 teaspoon paprika
  • 1/4 to 1/2 teaspoon kosher salt adjust to taste
  • 1 teaspoon coarse black pepper freshly cracked
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon lemon juice
  • zest 1 lemon

Instructions

  • In a large mixing bowl, add the chicken, olive oil, lemon zest, lemon juice and seasonings (paprika, salt, black pepper, garlic and onion powder). Mix ingredients together to thoroughly combine.
  • Cover bowl and refrigerate the marinade for 1 to 2 hours or overnight. Remove marinaded chicken from the fridge 15 to 20 minutes before making skewers to bring to room temperature.
  • Thread 5 to 6 pieces of the marinaded chicken onto the pre-soaked skewers for a total of (8) chicken skewers.

  • In (2) batches (4 skewers in each batch), air fry the chicken skewers for 6 to 7 minutes, carefully flip the skewers to the other side and air fry for an additional 6 to 7 minutes or until the chicken is fully cooked. If you have a kitchen thermometer, the internal temperature of the chicken should register at least 165F.
  • Transfer first batch of the cooked chicken skewers to a large plate and air fry the second batch following the same process.
  • As the last batch of skewers cooks, make the lemon pepper sauce. In a small mixing bowl, add the partially melted butter, lemon juice, lemon zest and seasonings (paprika, fresh cracked black pepper, salt, garlic and onion powder). Whisk ingredients together to combine.
  • Once all the skewers are cooked, use a pastry brush to thoroughly coat all sides of the chicken skewers in the lemon pepper sauce.
  • Serve lemon pepper chicken skewers as is or with your preferred side and sauce. I served the skewers with a garlic aioli sauce (link to recipe is shared in the notes). Enjoy!
