Homemade French Fries

Crispy Homemade French Fries are a special treat that can be from scratch following a few straightforward steps!

Ingredients

  • 3 large russet potatoes, washed and peeled
  • vegetable oil, for frying
  • salt to taste

Instructions

  • Fill a large bowl with ice and water. Set aside.
  • Cut potatoes into 1/4 to 1/2 inch thick sticks, based on thickness preference. Add potatoes into bowl with iced water and soak for 30 minutes.
  • As the potatoes soak, line a large baking sheet with paper towels. Set aside. Next, bring a large pot of water to a boil and season generously with salt.
  • Drain potatoes, carefully add into pot with boiling water and parboil for 5-6 minutes. The goal here is to soften the potatoes a bit but not cook them through. This will help create fries with a crisp exterior and fluffy interior once fried.
  • Transfer parboiled potatoes to a paper towel lined baking sheet. Evenly space out the potatoes and air dry for at least 10 minutes.
  • In a heavy-bottomed pot over medium high heat, add enough oil to fill up 2/3 of the pot. Heat oil to 300F.
  • In batches, fry the potatoes to cook through but not brown, about 5-6 minutes. Transfer to paper towel lined baking sheet.
  • Heat oil to 375F. In batches, add the fries back into the oil and fry until golden brown, about 4-5 minutes or longer as needed.
  • Transfer cooked fries to paper towel lined baking sheet to drain excess oil. Season with salt to taste and serve immediately as is or with your favorite sauce. Enjoy!

Notes

For the best results, use a deep fry (kitchen) thermometer to help monitor the temperature of the oil.
