Garlic Parmesan Chicken Wrap

Ingredients

For the Chicken

  • 2 pounds chicken breasts, cut into diagonal strips
  • 3 tablespoons olive oil, plus more for cooking
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon fine kosher salt, adjust to preference
  • 1/2 teaspoon black pepper

For the Garlic Parmesan Sauce

  • 1 cup chicken broth
  • 1/2 cup half and half
  • 6 tablespoons parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon all purpose flour
  • 3 garlic cloves, finely minced
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon fresh cracked black pepper
  • 1/4 teaspoon onion powder, optional
  • fine kosher salt, as needed

Garlic Parmesan Fries and Assembly 

  • 1 pound store bought fries, prepared according to package instructions
  • 3 tablespoons salted butter
  • 2 to 3 garlic cloves, finely minced
  • 3 tablespoons fresh parsley, finely chopped, plus more for garnish
  • 3 tablespoons parmesan cheese, freshly grated, plus more for garnish
  • 4 burrito sized flour tortillas
  • 3/4 cup mozzarella cheese, shredded

Instructions

For the Chicken 

  • In a large mixing bowl, add the chicken, olive oil and seasonings (paprika, salt, black pepper, garlic and onion powders). Give the chicken mixture a thorough mix to combine.
  • In a large nonstick frying pan under medium high heat, drizzle in some olive oil, about 1 tablespoon. Add in half of the seasoned chicken and cook for 5 to 6 minutes, flip over the chicken pieces, and cook for an additional 4 to 5 minutes or until the chicken is fully cooked through.
  • Transfer the cooked chicken into a large bowl or plate. Repeat process with the remaining chicken. Set the cooked chicken aside.

Garlic Parmesan Sauce

  • In a large pan under medium heat, melt the butter. Mix in the minced garlic and seasonings (dried parsley, dried oregano, salt, black pepper and onion powder). Cook the garlic mixture while stirring for about 1 minute.
  • Next, mix in the flour and cook the flour mixture while whisking for 1 to 2 minutes. Slowing whisk in the chicken broth and half and half.
  • Reduce the heat to medium low and cook the sauce stirring intermittently for 2 to 3 minutes or until it has thickened and coats the back of a spoon.
  • At this point, mix in the parmesan cheese. Taste the sauce and season with salt as needed. Remove the sauce from the heat and set aside to cool. The sauce will thicken as it cools. If it gets too thick, mix in some water or more half & half one tablespoon at time to restore a spreadable consistency.

Garlic Parmesan Fries and Wrap Assembly

  • As the sauce cools, make the garlic parmesan fries. In a small saucepan under medium heat, melt the butter (3 tablespoons). Mix in the minced garlic and cook the garlic butter mixture for 1 minute. Remove from the heat.
  • In a large mixing bowl, add the cooked fries, garlic butter, fresh parsley (3 tablespoons) and parmesan cheese (3 tablespoons). Give the mixture a good mix to combine. Set aside.
  • In a large pan or skillet under low heat, lightly warm up both sides of the tortillas and transfer to a large plate. This will help make the tortillas more pliable to fold into a wrap.
  • On a clean work surface, place down a flour tortilla. Spread 2 to 3 tablespoons of the garlic parmesan sauce onto the center of the tortilla. Sprinkle over some mozzarella cheese, about 2 to 3 tablespoons.
  • Place down a layer of the cooked chicken and then a layer of the garlic parmesan fries (about 8 to 10 fries). Add a drizzle of the garlic parmesan sauce over the fries and some fresh parsley.
  • Fold the bottom and outer edges of the tortilla over the fillings to close and form a wrap. Secure the wrap in a piece of parchment paper (optional) and transfer to a large plate. Repeat process with the remaining ingredients for a total of (4) wraps.
  • Before serving, the wraps can be toasted in a lightly greased pan over medium heat (optional).
  • Garnish the wraps with an extra drizzle of the garlic parmesan sauce and a sprinkling of freshly parsley and parmesan.
  • Serve wraps with any remaining garlic parmesan fries and sauce. Enjoy!
