Fudgy Oreo Brookies Recipe

This Fudgy Oreo Brookies Recipe is the perfect sweet treat consisting of layers of brown butter chocolate chip cookie, Oreos and a richly, chocolatey brownie!

Ingredients

Brown Butter Cookie Layer

  • 1 1/4 cups (163g) all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg room temperature
  • 6 tablespoons (75g) dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (113g) unsalted butter, cut into large chunks
  • 1 tsp vanilla extract
  • 5 ounces (142g) semisweet chocolate chips

Brownie Layer

  • 1/2 cup (65g) all purpose flour
  • 1/4 cup (24g) Dutch processed cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 tsp salt
  • 2 eggs room temperature
  • 3/4 cup (150g) granulated sugar
  • 4 ounces (113g) semi-sweet chocolate bar, roughly chopped
  • 1/4 cup (57g) unsalted butter
  • 3 tablespoons (45ml) avocado oil
  • 1 tsp (5ml) vanilla extract
  • 2 ounces (57g) chocolate chunks or chips, optional

Assembly 

  • 12 Oreo Cookies plus more for topping on brookies

Instructions

Brown Butter Cookie Layer 

  • In a small saucepan under medium low heat, add and melt the butter while stirring with a heatproof spatula. Increase heat to medium to bring the butter to a low boil while stirring intermittently. The butter will start to foam and then gradually brown as the milk solids become toasted and it takes on a rich, nutty aroma. Remove the browned butter from the heat and cool to room temperature. You should end with about 6 tablespoons (3 to 3.2 ounces) of browned butter.
  • In a medium mixing bowl, add the brown sugar, granulated sugar, cooled brown butter, egg and vanilla extract. Whisk ingredients together to combine.
  • Into the bowl with the wet batter, add in the flour, baking soda and salt. Using a spatula, fold the dry ingredients into the wet batter just until a soft cookie dough forms. Mix the chocolate chips and set the bowl with the cookie dough aside.

Brownie Layer

  • Preheat the oven to 350F. Lightly grease and line all (4) sides of an 8x8 baking pan with parchment paper. Set aside.
  • In a small mixing bowl, add the chopped chocolate, butter and oil. Melt the chocolate mixture either in the microwave on high at 30 seconds intervals or over a double boiler on the stove. Give the melted chocolate mixture a thorough mix and set aside to cool slightly.
  • In a separate mixing bowl, add the eggs and granulated sugar. Whisk these ingredients together until a thick, pale yellow mixture forms, about 3 to 4 minutes.
  • Into the bowl with the egg batter, add in the melted chocolate mixture and vanilla extract. Whisk to combine.
  • Next, add in the flour, cocoa powder, baking powder and salt. Gently, whisk the dry ingredients into the wet mixture until a smooth brownie batter forms. Fold in the chopped chocolate or chips (optional).

Assembly and Bake

  • Add two-thirds of the cookie dough into to the baking pan and flatten into an even layer. Next, add a layer of Oreo cookies (12 total) on top of the cookie dough.
  • On top of the Oreos, add all of the brownie batter and smooth into an even layer using an offset or regular spatula.
  • Assemble flatten pieces of the remaining cookie dough over the top of the brownie layer and then add some broken up pieces of Oreos.
  • Transfer baking pan into preheated oven and bake the brookies for 32 to 36 minutes or longer as needed.
  • Brookies are done when a toothpick inserted into the center comes out with a few moist, sticky crumbs. Take care to not over bake the brookies. (If inserted toothpick comes out clean, then the brookies were over baked but if it comes out with wet batter, then the brookies need to bake a few minutes longer.)
  • Cool the brookies in the pan for 40 to 50 minutes before cutting into 9 equal pieces. Serve and enjoy!!
