Ingredients

Chicken Breasts

  • 2 large chicken breasts, sliced in half and gently pounded into even thickness
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt, adjust to taste
  • olive oil, for cooking

Garlic Butter

  • 1/2 cup unsalted butter, softened
  • 1/4 cup parmesan cheese, freshly grated
  • 2 tablespoons finely minced garlic
  • 2 tablespoons fresh parsley, finely chopped
  • salt to taste
  • black pepper to taste

Alfredo Sauce

  • 2 cups (1 pint) heavy cream
  • 1 cup parmesan cheese, freshly grated
  • 1/4 cup (4 tablespoons) unsalted butter
  • 2 tablespoons finely minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder, optional
  • salt to taste
  • black pepper to taste

Assembly

  • 1 Italian bread loaf sliced in half
  • 2 to 3 cups mozzarella cheese shredded
  • fresh parsley finely chopped, garnish

Instructions

Chicken Breasts

  • In a small dish, mix together the paprika, garlic powder, onion powder, salt and black pepper. Generously season the chicken breasts on both sides.
  • In a large pan or skillet over medium heat, add in some olive oil (about 2 tablespoons). In batches, cook the chicken breasts, about 4-5 minutes per side, or until the internal temperature of the chicken registers 165F on a kitchen thermometer. Remove from heat and set aside to cool to room temperature before slicing the chicken breasts into even pieces.

Alfredo Sauce

  • In a saucepan over medium heat, melt the butter. Add in the garlic and cook until softened and fragrant, about 1-2 minutes. Add in the heavy cream and seasonings (Italian seasoning, onion powder, salt and black pepper). Mix to combine and then gradually mix in the parmesan cheese. Reduce heat to low and simmer the sauce for 4-5 minutes or until it starts to thicken. Remove from heat and set aside. Note - sauce will thicken further as it cools. To restore pourable/spreadable consistency, mix in some water, 1 tablespoon at a time, to thin out.

Garlic Butter

  • In a small mixing bowl, add the butter, garlic, parmesan cheese, parsley, salt and pepper. Mix to combine and set aside.

Assembly

  • Preheat oven to 350F. Slice the bread loaf in half. Spread half of the garlic butter over each half of the bread loaf. Spoon over and spread about 4 tablespoons (or more as needed) of the alfredo sauce. Top with 1 to 1 1/2 cups of mozzarella cheese. Equally place the slices of chicken on top of the mozzarella cheese. Drizzle over some more of the alfredo sauce.
  • Transfer assembled garlic breads to a large parchment lined baking sheet. Bake for 20-25 minutes or until the bread is crisp and the cheese just starts to become a toasty golden brown.
  • Cut the chicken alfredo garlic breads into desired slices and serve immediately. Enjoy!
