How to Make Baked Accordion Potatoes
This perfectly seasoned Crispy Baked Accordion Potatoes Recipe is such a delight! Its unique shape makes these potatoes so fun to eat. Made with slices of Yukon gold potatoes that are cut horizontally, flipped and cut diagonally before it is coated in a seasoned oil mixture and baked until crisp on the outside with a soft center, this Accordion Potato recipe is so GOOD! To make these potatoes, you will need the key ingredients shared below. (Scroll down to recipe card for exact measurements)
Key Ingredients
- Yukon Gold Potatoes
- Avocado or Olive Oil
- Seasonings (Paprika, Onion Powder, Garlic Powder, Salt and Black Pepper)

Preparation
- Prep Potatoes – fill a large mixing bowl with cold water. Set aside. Working with one potato at a time, trim the edges to form a flat base on all (4) sides. Then, vertically cut the potato into 1/3 inch thick slices. Place one of the slices between 2 chopsticks or skewers and then make close thin horizontal cuts down the length of the slice. Take care to not cut all the way through the potato. Next, flip the potato over and make diagonal cuts down the length of the potato without cutting all the way through. Transfer the cut potato slice into the bowl with the cold water and repeat this process with the remaining potatoes. Soak the potato slices in the cold water for 30 to 60 minutes.
- Season Potatoes – preheat oven to 400F. Line a large baking sheet with parchment paper. Set aside. In a small mixing bowl, add and mix together the oil and seasonings. Set aside. Rinse and drain the soaked potato slices and then thoroughly pat dry with clean kitchen towels or paper towels. Transfer the potato slices onto prepared baking sheet. Use a pastry brush to coat both sides of the potato slices with the seasoned oil mixture.
- Bake Potatoes – for 25 minutes, flip the potatoes, and bake for an additional 15 to 20 minutes or until the potatoes are crispy and golden brown.
- Serve – garnish accordion potatoes with fresh parsley and Parmesan cheese (optional) and serve immediately while still hot as is or with your favorite dish or sauce for dipping.

- 1/4 cup avocado or olive oil
- 1/2 to 1 teaspoon kosher salt, adjust to taste
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon of garlic powder
- 1 teaspoon onion powder
- fresh parsley, finely chopped, optional
- parmesan cheese, freshly grated, optional
Instructions
- Fill a large mixing bowl with cold water. Set aside. Working with one potato at a time, trim the edges to form a flat base on all (4) sides.
- Next, vertically cut the potato into 1/3 inch thick slices. (You should end up with about 3 thick slices for each potato.)
- Place one of the potato slices between 2 chopsticks or skewers and then make thin horizontal cuts down the length of the slice without cutting all the way through. Then, flip the potato slice over and make diagonal cuts down the length of the slice without cutting all the way through.
- Transfer the accordion potato slice into the bowl with the cold water and repeat this process with the remaining potatoes for a total of 12 accordion potato slices.
- Soak the accordion potato slices in the cold water for 30 to 60 minutes.
- Pre-heat oven to 400F. Line a large baking sheet with parchment paper. Set aside.
- In a small mixing bowl, add and mix together the oil and seasonings (paprika, salt, black pepper, garlic and onion powder). Set aside.
