How to Make Homemade French Fries
Making fries from scratch may seem intimidating but is truly not that difficult. In fact, you can have perfectly golden brown fries with a crisp exterior and fluffy potato interior whenever you want by following a few straightforward steps and using the key ingredients shared below.
Key Ingredients
- Russet Potatoes
- Vegetable Oil
- Salt

Preparation
- Prep Potatoes – fill a large mixing bowl with ice and water. Set aside. Cut potatoes into 1/4 to 1/2 inch thick sticks. Place cut potatoes into bowl with iced water and soak for 30 minutes to help remove excess starch.
- Boil Potatoes – bring a large pot of water to a boil, season generously with salt and parboil the potatoes for 5-6 minutes.
- Dry Potatoes – transfer parboiled potatoes to a paper towel lined baking sheet. Allow to air dry for 10 minutes.
- First Fry – in a heavy-bottomed pot, heat up oil to 300F. In batches, fry the potatoes to cook through for 5 minutes. Transfer to a paper towel lined baking sheet.
- Second Fry – increase the heat of the oil to 375F. In batches, add the fries back into the oil and fry 4-5 minutes or until golden brown. Transfer to paper towel lined baking sheet and season generously with as salt. Serve immediately while still warm.

Homemade French Fries
Ingredients
- 3 large russet potatoes, washed and peeled
- vegetable oil, for frying
- salt to taste
Instructions
- Fill a large bowl with ice and water. Set aside.
- Cut potatoes into 1/4 to 1/2 inch thick sticks, based on thickness preference. Add potatoes into bowl with iced water and soak for 30 minutes.
- As the potatoes soak, line a large baking sheet with paper towels. Set aside. Next, bring a large pot of water to a boil and season generously with salt.
- Drain potatoes, carefully add into pot with boiling water and parboil for 5-6 minutes. The goal here is to soften the potatoes a bit but not cook them through. This will help create fries with a crisp exterior and fluffy interior once fried.
- Transfer parboiled potatoes to a paper towel lined baking sheet. Evenly space out the potatoes and air dry for at least 10 minutes.
- In a heavy-bottomed pot over medium high heat, add enough oil to fill up 2/3 of the pot. Heat oil to 300F.
- In batches, fry the potatoes to cook through but not brown, about 5-6 minutes. Transfer to paper towel lined baking sheet.
- Heat oil to 375F. In batches, add the fries back into the oil and fry until golden brown, about 4-5 minutes or longer as needed.
- Transfer cooked fries to paper towel lined baking sheet to drain excess oil. Season with salt to taste and serve immediately as is or with your favorite sauce. Enjoy!
