pesto pasta with crispy parmesan chicken 🌱✨ - this pasta recipe is one of my go-to meals when i am craving the rich savory flavors of pesto! aside from being absolutely delicious, it is relatively easy to make!!

what you’ll need:

Breaded Chicken
• 2 large chicken breasts, sliced in half for a total of (4) pieces
• 1 cup plain panko breadcrumbs
• 1/2 cup flour
• 2 large eggs, whisked
• 2 tbsp Parmesan cheese, grated
• 1 tsp dried oregano
• 1 tsp dried parsley
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• Salt and pepper, to taste
• Neutral flavored oil, for frying
Creamy Pesto Pasta
• 8 ounces dried pasta like rigatoni or penne
• 1 tablespoon olive oil
• 3 large garlic cloves, minced
• 1/2 cup pesto
• 3/4 cup heavy cream
• 1/4 cup Parmesan cheese, grated, plus more for serving
• Salt and pepper, to taste

here’s how to make it:

Breaded Chicken - preheat oven to 200F. Place a cooking rack over a baking sheet. Set aside. Assemble (3) bowls. Bowl 1 - add the flour, season with salt, pepper, and mix. Bowl 2 - add and whisk the eggs. Bowl 3 - add and mix the bread crumbs, Parmesan, dried herbs, garlic and onion powder. Season with salt and pepper. Coat chicken slices in the flour, then the egg and coat in breadcrumbs. Heat oil in a pan and fry the chicken on both sides, about 2-3 min. Transfer to cooling rack setup and place in oven until ready to serve.
Pesto Pasta - Bring a pot of water to a boil and salt generously. Stir in the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water and drain the pasta. In a skillet over medium heat, add olive oil and garlic. Cook garlic until fragrant, 1-2 min. Stir in the pesto and then the heavy cream. Mix in the cooked pasta, Parmesan cheese and salt and pepper, to taste. Cook pasta for 2-4 min. If needed, mix in some of the reserved pasta water to thin out sauce.
Assembly - dish out pasta into equal portions. Slice chicken breast into smaller pieces and place on top of pasta. Grate extra Parmesan cheese over pasta before serving and enjoy!!

fudgy brownies 🍫🤤 - this recipe for fudgy chocolate brownies is so rich, decadent and packed with melty chocolate goodness!

what you’ll need:

• 1 cup (130g) all-purpose flour, spooned and leveled
• 1/4 cup (24g) Dutch processed cocoa powder
• 1/2 tsp salt
• 3 large eggs, room temp
• 1 cup (200g) granulated sugar
• 8 oz (226g) dark chocolate, roughly chopped
• 4 oz (113g) unsalted butter, cubed
• 3 tbsp (45ml) neutral flavored oil
• 1 1/2 tbsp vanilla extract
• 6 oz (170g) dark chocolate chucks or disks (chopped into large and small pieces), divided
• Flaky sea salt, optional

here’s how to make it:

Preheat oven to 350F. Lightly grease and line an 8x8 square inch pan with parchment paper. Set aside. In a heat safe bowl, add the roughly chopped chocolate, butter and oil. Place bowl over a pot of simmering water and stir until all of the chocolate and butter is melted. Remove from heat and set aside. In a separate bowl, add and whisk together the eggs and sugar until mixture thickens and takes on a pale yellow color, 4-5 min. Whisk in the vanilla extract and then the chocolate mixture to combine. Mix in the flour, cocoa powder and salt until a smooth brownie batter forms. Fold in half (3oz) of the chocolate chucks/disks into the batter. Transfer batter into baking pan and smooth into an even layer. Sprinkle top with remaining chocolate chucks/disks (if using chocolate disks, I like to leave some whole and some chopped into smaller pieces). Bake for 30-32 min (If oven runs hot, check on brownies at the 28-30 min mark). Brownies are done when a toothpick inserted into the center comes out with a few moist, fudgy crumbs. Cool brownies in pan for 15-20 min before removing from pan. Sprinkle top with flaky sea salt (optional). Cut into bars and enjoy!!

raising canes texas toast at home 🍞✨ - this fluffy bread recipe turned out so dang GOOD! It’s impossible to just have one!!

what you’ll need:

Texas Toast Dough
• 3 cups (390g) all purpose flour, spooned and leveled
• 2 tbsp (25g) sugar, divided
• 1 1/2 tsp active dry yeast
• 1 tsp salt
• 1 large egg, whisked
• 3/4 cup (177 ml) warm milk (105-110F)
• 5 tbsp (71g) unsalted butter, softened
• 1-2 tsp neutral flavored oil
• 1 large egg + 1 tsp water, whisked
• Sesame seeds
Honey Butter Glaze
• 2 tbsp unsalted butter, cut into cubes
• 1 tbsp honey
• Pinch of salt, optional
Toasting
• 2-4 tbsp unsalted butter, plus more as needed

here’s how to make it:

Texas Toast - In a large bowl, add and whisk together the warmed milk, 1/2 tsp sugar and the yeast. Cover bowl and set aside for 8-10 min or until the yeast mixture appears foamy. Mix in the flour, remaining sugar, salt, egg, and butter until a soft dough forms. Knead the dough in the bowl or on a floured surface for 5-6 min. Drizzle some oil over the dough. Turn the dough in the bowl to coat in oil. Cover bowl with plastic wrap/kitchen towel and place in a warm area of kitchen for 60-90 min or until the dough has doubled in size. Punch down risen dough and let it sit for 5 min before cutting into (8) equal pieces. Roll out each piece of dough into a 5x4 inch rectangle and then roll into a log shape. Place logs in a greased 9x9 inch baking pan and cover with plastic wrap/kitchen towel. Set side to rise, 25-30 min. Preheat oven to 350F. In a small dish, whisk together the egg and water. Brush rolls with egg wash and sprinkle top with sesame seeds. Bake for 25-30 min or until a toothpick inserted into one of the rolls comes out clean.
Honey Butter - in a small saucepan, add the butter, honey and salt. Cook mixture while stirring until all the butter is melted. Remove from heat.
To Serve - brush honey butter over warm rolls before serving. To serve toasted, cut the rolls in half. Melt butter in a skillet over medium heat. In batches, toast the rolls on both sides until golden brown. Serve rolls as is or with raising canes sauce. Enjoy!!

raising canes at home ✨ - since i am in my “make it at home era”, i decided to try out making the raising canes chicken tenders and sauce from scratch and it turned out so so GOOD!!

what you’ll need:

Chicken Tenders
Wet Mixture
• 1 1/2 pound (24 oz) chicken tenders
• 3/4 cups buttermilk
• 1 egg, whisked
• 1 tbsp Worcestershire sauce
• 1/2 tsp salt
• 1/2 tsp smoked paprika
• 1/4 tsp garlic powder
• 1/4 tsp onion powder
• 1/4 tsp black pepper
• 2-3 cups neutral flavored oil, plus more as needed for frying
Dry Mixture
• 1 1/2 cups flour
• 1/4 cup cornstarch
• 1 tsp baking powder
• 1 tsp salt
• 1/2 tsp smoked paprika
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/2 tsp black pepper
Raising Canes Sauce
• 1/2 cup mayonnaise
• 1/4 cup ketchup
• 1/2 tsp Worcestershire sauce
• 1/2 tsp smoked paprika
• 1/2 tsp garlic powder, adjust to taste
• 1/4 tsp onion powder
• 1/4 tsp black pepper
• 1/4 tsp salt, adjust to taste

here’s how to make it:

Chicken Tenders - In a bowl, mix together the tenders and all of the wet mixture ingredients (except for the oil). Cover and marinade for 1-4 hours or overnight in the fridge. In a separate bowl, whisk together all of the dry mixture ingredients. Mix in 2-3 tbsp of the wet mixture into the dry to form a crumbly texture. Thoroughly coat each tender in the dry mixture. Transfer to a wire rack to rest for 10-12 min (important for crispy tenders). Heat oil in a frying pan to 350F (make sure oil is not too hot to prevent tenders from browning too quickly before it’s fully cooked). In batches, fry the tenders, 3-4 min per side or until golden brown. Transfer to paper towel lined baking sheet.
Raising Canes Sauce - in a bowl, add and mix together all of the ingredients until smooth.
To Serve - plate tenders with sauce and serve with side of fries and toasted Texas Toasts (optional). Enjoy!!

lemon loaf cake 🍋✨ - this loaf cake is the perfect spring treat that is packed with lemon flavor in each bite!!

what you’ll need:

Lemon Loaf
• 2 cups all-purpose flour, spooned and leveled
• 1 1/2 tsp baking powder
• 1/4 tsp baking soda
• 1/4 tsp salt
• 3 large eggs, room temp
• 6 oz Greek yogurt, room temp
• 2 tbsp lemon juice
• 1/2 cup oil
• 1 tsp vanilla extract
• Zest (2) lemons
Lemon Syrup
• 3 tbsp fresh lemon juice
• 3 tbsp water
• 6 tbsp granulated sugar
Lemon Glaze
• 1 cup powdered sugar
• 3-4 tsp fresh lemon juice, plus more as needed

here’s how to make it:

Lemon Loaf - Preheat oven to 350F. Grease and line a loaf pan with parchment paper. Set aside. In a bowl, add the sugar and lemon zest. Use hands to infuse the zest into the sugar. Whisk the oil and yogurt into the lemon sugar and then the eggs, vanilla extract and lemon juice. Next, whisk in the flour, baking powder, baking soda and salt just until a smooth batter forms. Pour cake batter into loaf pan and lightly tap the pan on the counter. Bake for 50-60 min or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
Lemon Syrup - in a small saucepan, whisk together the water, lemon juice and sugar. Bring mixture to a boil under medium heat whisking until all the sugar is dissolved. Reduce heat and simmer syrup for 3-4 min. Remove from heat. Let syrup cool until it’s warm and no longer hot. Use a thin skewer or toothpick to poke holes into the cake. Pour the syrup over warm cake. Leave cake in the pan for 8-10 min before transferring to a cooking rack to cool to room temp.
Assembly - In a bowl, add the powdered sugar and whisk in 3 tsp (1 tbsp) of lemon juice. Test the consistency. If glaze is too thick, whisk in additional lemon juice 1/2 tsp at a time to get a thick but pourable consistency. Pour glaze over cooled cake. Use the back a spoon to spread glaze over the surface of the cake. Cut cake into equal slices. Enjoy!

what you’ll need:

Meat Sauce
• 1 tbsp olive oil
• 1 pound ground beef or Italian sausage
• 1/2 cup onions, chopped
• 4 garlic cloves, minced
• 1 1/2 tbsp tomato paste
• 28 oz can crushed tomatoes
• 1/4 cup heavy cream
• 2 tbsp fresh basil, finely chopped
• 2 tbsp fresh parsley, finely chopped
• 1 tsp sugar
• 1 tsp dried oregano
• 1/4 tsp red pepper flakes, optional
• Salt and pepper to taste
Ricotta Mixture
• 8 oz whole milk ricotta cheese
• 1/2 beaten egg
• 1/4 cup Parmesan cheese, grated
• 1/2 cup mozzarella cheese, shredded
• 1/2 tbsp fresh basil, finely chopped
• 1/2 tbsp fresh parsley, finely chopped
• Salt and pepper to taste
Baked Ziti
• 1/2 pound ziti pasta
• 1 1/2 cups mozzarella cheese, shredded

here’s how to make it:

1. Preheat the oven to 375F. Cook ziti pasta following package directions until al dente. Drain and mix with a little bit of oil to prevent sticking. Set aside.
2. In a pan over medium heat, cook ground beef until browned. Add in the onions and garlic. Cook until softened. Mix in the sugar, seasonings (oregano, red pepper flakes, salt and pepper) and tomato paste. Cook mixture for 2-3 min.
3. Stir in the crushed tomatoes and herbs. Reduce heat to medium-low and simmer sauce for 12-15 min. Mix in the heavy cream. Cook for an additional 5-6 min. Remove from heat and set aside.
4. In a bowl, add and mix together all of the ricotta mixture ingredients.
5. Next, mix together the ziti, ricotta mixture and 3 large spoons (about 1 cup) of the meat sauce.
6. Lightly grease a 9x9 baking pan and spoon in a thin layer of the sauce. Add half of the ziti mixture and spread out. Top with a layer of sauce and sprinkle with half of the mozzarella. Repeat layering with remaining ziti mixture, sauce and cheese.
7. Cover pan with foil and bake for 20 min. Remove foil and bake for an additional 10-15 min. For crisp, golden brown cheese top, broil for 3-5 min.
8. Sprinkle baked ziti with fresh chopped parsley before serving. Enjoy!

• 2 tbsp hot sauce

• 1/4 tsp garlic powder
• 1/4 tsp onion powder
• 2-3 cups neutral oil, for frying
Hot Honey Garlic Sauce
• 1/2 cup hot sauce
• 1/2 cup honey
• 2 tbsp butter
• 4 garlic cloves, minced
• 1/2 tsp smoked paprika
• 1/4 tsp cayenne pepper

here’s how to make it:

Chicken Tenders - In a bowl, mix together the tenders and all of the wet mixture ingredients (except for the oil). Cover and marinade for 1-4 hours or overnight in the fridge. what you’ll need:

Dough
• 3 cups all purpose flour
• 1 1/2 tsp active dry yeast
• 4 tsp sugar, Divided
• 3/4 tsp salt
• 1 Large egg
• 3/4 cup warmed whole milk (100-110F)
• 1/4 cup unsalted butter, softened
Filling and Topping
• 1 head of garlic
• 1/2 cup unsalted butter, room temp
• 1 heaping tbsp fresh parsley, chopped
• 1/2 tsp salt
• 1 1/2 cup mozzarella cheese, grated
• 1/2 cup Parmesan cheese, grated, plus more for topping rolls
• Olive oil

here’s how to make it:

Dough - In the bowl of a stand mixer, add and mix together the milk, 1 tsp sugar and yeast. Cover bowl and set aside for 8-10 min or until yeast mixture appears foamy. With the dough attachment, mix in the egg, flour, remaining sugar and salt at low speed until a shaggy dough forms. Slowly mix in the butter 1 tbsp at a time. Increase mixer speed to medium and knead dough for 6 min. Transfer dough to a greased bowl, cover and place in a warm area to double in size, 60-90 min. Filling and Topping - pre-heat oven to 400F Cut tip of garlic head off and place in the center of a piece of aluminum foil. Drizzle some olive oil over the top and wrap the garlic in the foil. Roast garlic until softened, 30-40 min. In a bowl, add and mix together the butter, parsley, salt and roasted garlic (press to squeeze out cloves). Set aside. Assembly - Deflate risen dough. Roll out dough into a large rectangle on a floured surface. Spread 2/3 of the garlic butter over rolled out dough. Sprinkle mozzarella and Parmesan cheese over butter. Starting on the long end of the dough, roll into log shape. Cut into 8 pieces and transfer into a greased baking dish. Cover with plastic wrap and set aside to rise until doubled. Preheat oven to 350F. Bake rolls for 25-30 min or until toothpick inserted into one of the rolls comes out clean. Melt remaining garlic butter and brush over rolls while still hot. Sprinkle top of buttered rolls with Parmesan. Serve rolls warm and enjoy!!

chicken shawarma bowl✨ - this recipe is one of my go-to meal prep options for the week. It is a vibrant, colorful dish packed with a mouth full of goodness in each bite!

what you’ll need:

Chicken Shawarma
• 2 pounds chicken thighs, cut into bite size pieces
• 1/4 cup olive oil, divided
• 3 tbsp lemon juice
• 6 garlic cloves, minced
• 1 tsp coriander
• 1 tsp cumin
• 1 tsp smoked paprika
• 1 tsp dried oregano
• 1/2 tsp turmeric
• 1/4 tsp allspice
• 1/4 tsp cardamom, optional
• Salt and pepper to taste
Yellow Rice
• 2 cups basmati or long grain rice, washed
• 3 1/2 cups water
• 2 tbsp olive oil
• 1 large bay leaf
• 1/2 tsp turmeric
• 1/4 tsp cumin
• Salt to taste
Garlic White Sauce
• 1/2 cup Greek yogurt
• 2 tbsp mayo
• Juice 1/2 lemon
• 1 to 2 garlic cloves, minced
• salt and pepper, to taste
• Water (to thin out sauce)
For Serving
• Romaine Lettuce, chopped
• Tomatoes, chopped
• Cucumbers, chopped
• Pita Wedges

here’s how to make it:

Chicken Shawarma - in a bowl, add and mix together the chicken, 2 tbsp oil, garlic and all of the seasonings. Cover and marinate for at least 30 min or overnight in the fridge. Heat the remaining 2 tbsp oil in a skillet over med-high heat. In batches, add and cook the chicken until golden brown and fully cooked, about 4-5 min per side. Remove from pan and set aside.  Yellow Rice - heat the oil in a pot over medium heat. Add the rice and toast for 2-3 min. Next, add and mix in the water, cumin, turmeric, bay leaf and salt. Bring to a boil and lower the heat to simmer. Cover pot and cook for 18-20 min or until all of the liquid is absorbed. Once cooked, removed bay leaf and fluff rice with a fork. Set aside. White Garlic Sauce - in a bowl, add and whisk all of the ingredients together until smooth. For a thinner sauce, mix in water 1 tbsp at a time until desired consistency is reached. To Serve - spoon desired serving of rice into a bowl, top with lettuce, tomatoes, cucumbers, chicken and pita bread. Drizzle on the white sauce. Enjoy!!
