How to Make Crispy Garlic Parmesan Chicken Bites 

This Crispy Garlic Parmesan Chicken Bites recipe is simply divine! Consisting of tender pieces of chicken that are fried until crispy and coated in a garlic and Parmesan flavored butter sauce, this recipe will leave wanting more. To make these chicken bites, you will need the key ingredients below. 

Key Ingredients 

  • Chicken Tenders or Breasts 
  • Buttermilk
  • Egg 
  • All Purpose Flour 
  • Cornstarch 
  • Baking Powder 
  • Seasonings (Paprika, Garlic Powder, Onion Powder, Salt, Black Pepper) 
  • Vegetable Oil
  • Unsalted Butter
  • Garlic Cloves 
  • Parmesan Cheese
  • Fresh Parsley

Preparation 

  • Marinade Chicken – in a large mixing bowl, add the chicken, buttermilk, egg and seasonings). Mix well to combine. Cover the bowl and marinade in the fridge for at least (1) hour or overnight. 
  • Dredge Chicken – in a large mixing bowl, add the flour, corn starch, baking powder, and seasonings. Mix well to combine. Drizzle in about 2 tablespoons of the chicken marinade liquid into the dredge mixture. Mix to form a crumbly texture. Add a few of the marinaded chicken pieces into the bowl with the dredge mixture. Use hands or large kitchen tweezers to thoroughly coat the chicken in the dredge mixture. Transfer to a parchment lined baking sheet. Repeat process with remaining chicken pieces and set aside. Reserve remaining dredge mixture. 
  • Fry Chicken – heat up oil in a large skillet or pot to 350F. Check the coated chicken bites. Before frying, lightly coat the bites in the remaining dredge mixture. Shake off any excess coating. In batches, fry the chicken bites until fully cooked and richly golden brown, 4-5 minutes or longer as needed. Transfer to a wire rack placed over a paper towel lined baking sheet to catch any excess oil. 
  • Make Sauce – in a small saucepan, melt the butter. Mix in the minced garlic and cook while stirring until the garlic starts to soften and become fragrant, about 1 minute. Remove from heat and transfer into a large heatproof mixing bowl. Allow the garlic butter to cool a bit before mixing in the fresh parsley, parmesan cheese, and seasonings. 
  • Coat Chicken – add the fried chicken bites into the mixing bowl with the garlic parmesan sauce. Gently to coat the bites in the sauce. 
  • Serve – transfer bites to a serving dish and spoon over any remaining minced garlic from the mixing bowl. Top with extra finely chopped parsley and grated parmesan cheese (optional) before serving.

Ingredients

Chicken Marinade

  • 1 pound chicken tenders or breasts, cut into bite sized pieces
  • 3/4 cup buttermilk
  • 1 large egg, whisked
  • 1 teaspoon paprika
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/2 to 3/4 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper

Dredge Mixture 

  • 1 cup all purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons paprika
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/2 to 3/4 teaspoon salt, adjust to taste
  • 1/2 teaspoon black pepper

For Frying

  • 2 to 3 cups vegetable oil

Garlic Parmesan Sauce

  • 6 tablespoons unsalted butter, cut into chunks
  • 3 tablespoons parmesan cheese, freshly grated
  • 1 heaping tablespoon garlic, finely minced
  • 1 1/2 tablespoons fresh parsley, finely chopped
  • 1/4 teaspoon onion powder
  • salt and black pepper, to taste
